3 lbs of Red Potatoes roughly peeled
(remove the eyes and bad spots and cube them into bite size pieces)
1 large diced onion
2-3 stalks of celery diced
fresh garlic or the mashed kind that comes in a jar
Butter (NOT MARGARINE) 1/2 stick
1 quart of fat free half and half
32 oz of chicken broth (I use better than bouillon soup base) to make my own
dried parsley, rosemary and thyme
about 4 dashes of liquid smoke
chopped ham
1 small container of sour cream

In a large pot add celery, onion and garlic and butter and cook until the onions are translucent. Add in the diced potates and the broth and the herbs. Salt and pepper the mixture. If there isn't enough broth in the ban to cover the mixture, asdd a bit of milk (skim is fine). Add the liquid smoked and the chopped ham. Put a lid on the pot and let it come to a boil for about 15 minutes. Check the potatotes to see if they are tender. If they are, stir iin the half and half and let it warm through. Taste it to see if it has enough salt and to see if you are happy with the smoky flavor. If not, add a bit more of whatever is missing. The liquid smoke makes it more savory. Turn off the heat and stir in the sour cream. It is best if you let it cool in the refrigerator over night. Reheat and serve with cheese, bacon bits and more onion, or whatever you like!
