Soup Mixture:
1 large stewing hen
cold water as needed
2 ribs of celery, diced
1 medium onion, diced
2 carrots, sliced
1 green pepper, quartered
salt and pepper to taste

Dumplings:
2 cups flou
3 tsp baking powder
1 tsp salt
2 eggs
3/4 cup of milk
4 tbsp. of cooking oil

Directions:
Directions:
Steve hen in the water in a dutch over until done. Remove the skin and de-bone the chicken. Return the chicken to the broth adding all remaining ingredients. Cook until the vegetables are tender.

For the dumplings: Sift the flour, baking powder and salt in bowl. In a seperate container, beat the eggs. Stir in milk and oil. Add the flour mixture all at once. Stir until just enough to mix the ingredients. Drop spoonfuls into hot broth. Cover tightly with lid for 12 minutes maintaining at a high boil WITH OUT PEEKING. ENJOY!!!
