Pouched eggs with basil, tomatoes & avocado
Ingredients
1 egg
3-5 cherry tomatoes, sliced
1 Tablespoon, roughly chopped fresh basil
1 drizzle of olive oil
1/2 avocado, mashed
1/2 English muffin or any sprouted bread
Salt, to taste
Pepper, to taste
Optional Drizzle maple syrup and balsamic

Directions:

Fill a large pan with water and bring to boil,
Once water has boiled turn off the heat and
crack egg carefully into the boiled water
Allow you egg to cook in water for about a minute or to your liking.
Scoop the egg out with a slotted spoon, and drain on a paper towel.
Lightly toast your bread slice
Combine the tomatoes, basil on the same cutting board.
Take the half avocado and mash it with a fork
Spread the mashed avocado over toasted bread, add salt and pepper .
Place pouched egg on the avocado slice. Top with basil and tomato slices. Drizzle with a touch of olive oil.
Top with cracked pepper... I LOVE drizzled maple syrup and balsamic oil....enjoy!
