2 lbs 80% lean ground beef
4 oz pepperoni mini's
6 oz summer sausage sliced 1/4 to 3/8 inch
8 fresh Roma tomatoes
20 oz tomato puree
8 green onions
2 garlic cloves crushed and minced
1 tbsp fresh chopped basil
1 1/2 tsp fresh thyme leaves
1 tsp fresh tarragon
2 tsp salt 1 1/2 tsp pepper
4 oz shredded mozzerella
4 to 6 oz shredded triple cheddar
half of a red bell pepper diced
4 cups finely chopped cauliflower and carrot
full package of tortellini pasta

Preheat oven to 350
In a large skillet brown ground beef with green onion whites, the part closest to the root and garlic. Drain off grease.
Mean while in a blender add tomatoes until smooth add pepperoni, green onion greens, basil, thyme, tarragon a dash of paprika and chili powder blend only to mix then let sit and breath it will change color orange to red after about 10 minutes. add half of the tomato puree and mix again for a few seconds.
grease a 9 x 13 baking dish the cut into quarters about 6 of the summer sausage pieces and place evenly on the bottom of the dish. Add a thin layer of cauliflower and carrot mix. Add an even layer of ground beef add tortellini then add a layer of sauce mix, then a layer mozzerella, then cauliflower and carrot, beef again add the rest of puree to blander mix one last time then add to dish. place in oven for 45 min remove and add the rest of summer sausage in an even layer then triple cheddar over the top place back in oven for 45 minute or until cheese is melted. remove and serve.
