1 1/2 lbs Ground Beef

1 pound Ground Pork

2 large eggs

2 slices of bread

1 med onion

2 garlic cloves

1 bunch green onions greens only chopped into 1/4 inch pieces

1 roma tomato cut into cubes

1 tsp paprika

1 tsp chili powder

6 oz shredded cheddar cheese

10 ounces enchilada sauce

8 ounces refried beans

dash of salt and pepper

Preheat oven to 400º

in a large mixing bowl add beef, pork, eggs, bread, half of each spice and half of the refried beans, enchilada sauce, onions and mix with hands until well blended. add 3/4 of meat mixture to a glass loaf pan press so meat covers the bottom of the pan and rides 3/4 way up the sides.

Add refried beans half of the tomato and half of the cheese.

place the remaining of the meat mixture over the top and lightly press sides together to seal. place in oven for 45 minutes remove from oven and add the rest of sauce cheese and tomato place back in the oven for 15 minutes remove let it rest for 10 minutes and serve.

I came up with this recipe at work when i had a craving for both Meatloaf and Enchiladas. I feel it was very successful in an attempt to bring together both worlds of cuisine.
