1 medium onion chopped
3 slices of bacon cut into pieces
One whole chicken cut into 8 parts
flour for dredging
2 knobs butter and 2T olive oil for frying
Mushrooms - 1 ½ lbs.
Bouquet garni
4 cloves of garlic smashed
Salt or pepper
1 pint of red wine

a side of roasted potatoes

Preheat oven to 350º and cook for 1½ hr.

1. Fry bacon pieces and add to chopped onion to flavour the onion
2. Add to a large roaster preferably a heavy dutch oven
3. Dredge the 8 chicken parts in flour
4. Fry the chicken in butter and olive oil and turning until brown
5. Slice mushrooms in half and add mushrooms, bouquet garni and garlic cloves, salt and pepper
6. Cover with red wine and bake in the oven

Serve with oven roasted potatoes cut up and roasted with olive oil and seasoning coating the potatoes. Plan for a least one medium potato for each person or more.
