1½ c. Sugar
3 tbsp. Cornstarch
3 tbsp. All-Purpose Flour
1½ c. Water
3 Eggs ( Separated )
2 tbsp. Butter
½ tsp. finely shredded Lemon peel
⅓ c. Lemon Juice

1 9 inch Baked Pastry Shell

3 eggs whites
½ tsp. vanilla
¼ tsp. cream of tarter
6 tbsp. sugar

Directions:

In a saucepan combine sugar, cornstarch, flour and dash salt. Gradually stir in water. Cook over medium high heat stir continuously until mixture is thickened and bubbly. Reduce heat and stir for a 2 minutes more. Remove from heat. Separate egg from whites; set aside egg white½s for the meringue. Beat yolks slightly. Stir about a cup of the hot mixture into the beaten egg yolks. Return to saucepan: bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in butter and lemon peel. Gradually stir in lemon juice, mixing well.
