12 oz Bacon
1 med Yellow Onion (Diced)
2 tbsp Flour
˝ cup Water
1 cup Cider Vinegar
1 cup Sugar
1 lb Spinach Leaves, destemmed and rinsed

Directions:
Directions:
Chill or freeze bacon and cut into small pieces (1/4” size). Fry in skillet. Just before bacon turns brown, add diced onion and sauté until bacon is brown and onions are tender. Add flour to skillet and stir. Add sugar, vinegar and water. Continue to stir until sugar is dissolved. Allow to cool to warm, not hot. Can be made ahead of time and put in sealed container in refrigerator. When ready to use, warm in microwave. Just before serving, put spinach leaves in a mixing bowl, add grated hard-boiled egg, sliced mushrooms and enough dressing to coat spinach thoroughly-toss. Don’t overdo the dressing, you can always add more. Serve immediately as the spinach will begin to wilt as soon as you put the warm dressing on it.
