1 c shortening or butter
2 c sugar
2 eggs and 2 yolks (keep whites for filling)
1 c buttermilk or sour milk
1 c hot water
2 t soda
1 t baking powder
4 c flour
1 c cocoa
½ t salt

Filling:
2 egg whites
¾ c Crisco
2 t vanilla
2 T flour
1 T powdered sugar
2 T milk
2 more c powdered sugar

Directions:
Directions:
Beat shortening, sugar, 2 eggs plus 2 yolks. Add buttermilk. Mix hot water and soda and add to creamed mixture. Then mix flour, cocoa, salt and baking powder. Add to creamed mixture and mix well. Use 1 T dough to make each cookie. Bake at 400 degrees for 10 minutes. This should make 28 large cookies, 4 inches in diameter. Cool.

Filling:
Beat Crisco. Beat egg whites.* Then add all together with flour, 2 T powdered sugar and milk. Stir well. Then add the 2 more c of powdered sugar and beat well. Put flat sides together with the filling between cookies.

According to her son, Gary, Ruth would make these cookies for special occasions, Cathy Lobe says that Ruth was a wonderful cook. They loved eating her desserts and coffee cakes.
