2 gal large cucumbers, pealed and sliced
2 c lime (slacked)
8 1/2 qt water
1 c vinegar
1 bottle red or green food coloring
1 TBS alum
water to cover
Syrup:
2 c vinegar
2 c water
10 c sugar
8 sticks cinnamon
1 pkg red hots

Directions:
Directions:
Let cucumbers soak for 24 hours in lime water. After 24 hours, drain slices and wash with clear water. Pour cold fresh water over slices and soak for 3 hours and drain. Cut the center of slices out. Add: vinegar, coloring and alum with water to cover. Heat and simmer for 2 hours, then drain. Syrup: Bring to a boil. Pour over rings. Keep lid on tight and let set overnight. Drain and heat syrup for 3 mornings and pour over cucumbers. Last morning, heat rings and syrup to boiling. Add 1 c or more water. Pack in jars and seal.
