2 tbsp vegetable oil
2 medium yellow onions diced small
3-5 cloves of garlic minced
2 lb ground beef
5 tbsp chili powder
3-4 tbsp ground cumin
4 tbsp sugar
4 tbsp tomato paste
2-3 tbsp garlic powder
3 tsp salt
1 tsp pepper
1 1/2-2 tsp white vinegar
2 tsp soy sauce
3 c. beef broth
1/8-1/4 tsp cayenne pepper
28 oz. can of diced tomatoes
15 oz. tomato sauce

Directions:
Directions:
In a bowl or zip, combine the chili powder, cumin, garlic powder, sugar, salt, cayenne, and ground pepper.

Heat the oil over medium in a 4 quart stockpot until shimmering.

Sauté the onions until translucent and slightly caramelized. til they are translucent and begin to caramelize. Add the garlic and continue to cook for an additional minute.

Add the ground beef and brown. Drain the grease. Move the onions, garlic, beef to one side of the pot.

Add the spice mixture to he pot and cook until fragrant. Mix into the beef and add the tomato paste.

Add the broth, diced tomatoes, and tomato sauce. Stir well and bring to a boil. Reduce to a simmer and cook uncovered for 10 minutes. Stir occasionally.

Add the vinegar and soy sauce. Simmer an additional 20-30 minutes. Add salt and pepper to taste.

Serve with sour cream, grated cheese, sliced scallions, or your choice of toppings.
