- 1 medium onion roughly chopped
- 8 – 10 cloves of garlic roughly chopped
- Pour of olive oil
- Large head of broccoli and stems cut into small florets
- 12 – 14 celery sticks cut into small pieces
- ˝ to 1 cup nutritional yeast
- A good glug of any milk
- Chicken Bovril
- ˝ to 1 cup butter
- Lots of salt and pepper

- Sauté the onion and garlic with olive oil and salt in a large stock pot until fragrant, but don’t brown
- Add in chopped broccoli and celery – sauté until slightly soft
- Add in whole carton of chicken stock
- Add enough water or more stock to make however much broth you think you need
- Add a good glug of milk
- Bring the liquid and the vegetables to a full boil
- Add Bovril, salt, pepper and check for seasoning
- Add in ˝ cup of nutritional yeast
- Add in ˝ cup of butter
- Turn heat off and blend with an immersion blender
- Add more Bovril, salt, butter or nutritional yeast until it’s creamy and delicious. Will probably, most definitely need way more salt and butter! Just be sure to blend again until all of the vegetables are pureed. Could add a good splash of heavy cream as well, but I only had butter when I made it and it turned out amazing.

I made it because we had a bunch of celery that was about to go bad. I know this sounds weird, but it's the best soup I have ever made lol. It took me a bit to adjust for the seasoning until I had it just right. More salt, more butter, more nutritional yeast and more blending.
