2 TEASPOONS GRATED ORANGE ZEST
3 LARGE EGGS
24 OUNCES SWEETENED COCONUT - (6 PACKAGED CUPS)
2 - 3 OUNCES BITTERSWEET CHOCOLATE - MELTED

POSITION RACK IN MIDDLE OF OVEN. PRE-HEAT OVEN TO 325 DEGREES.
LINE COOKIE SHEETS WITH PARCHMENT PAPER.
MAKES ABOUT 5 DOZEN.

IN LARGE BOWL, BEAT BUTTER UNTIL SMOOTH.
ADD SUGAR & SALT, BEAT UNTIL BLENDED.
BEAT IN ORANGE ZEST, THEN EGGS, ONE AT A TIME.
MIX IN COCONUT.
DROP BATTER ONTO SHEETSBY TABLESPOONS, SPACING ABOUT 1 1/2 INCHES APART.

BAKE ONE SHEET AT A TIME, FOR 25 - 30 MINUTES UNTIL GOLDEN ON BOTTOM AND BROWNED IN SPOTS.
COOL ON SHEETS. REMOVE TO RACK. USING FORK, DRIZZLE CHOCOLATE OVER MACAROONS.
