1.5# Boneless, skinless chicken breasts
1 Lg Yellow onion, diced
4 Cloves Garlic, mashed
32oz Low sodium chicken stock
2 cans 15oz Great Northern beans, drained and rinsed
1 can 4oz diced green chilis (1 hot, 1 mild)
1 can 15oz sweet corn, drained
2 tsp Cumin
2 tsp Oregano
1 tsp Chili powder
1 packet Dry ranch dressing mix
½ tsp Cayenne pepper
1 sm Handful fresh cilantro, chopped
4-6 oz Reduced fat cream cheese, softened
½ cup Half and half

Toppings:
Sliced jalapenos
Sliced avocados
Dollop reduced fat sour cream
Minced fresh cilantro
Tortilla strips
Juice of one lime
Shredded Monterey Jack cheese or Mexican cheese

Directions:
Directions:
Add chicken breasts to bottom of slow cooker crock pot; top with salt, pepper, cumin, oregano, chili powder, ranch dressing packet, cayenne pepper. Top with diced onions, minced garlic, great Northern Beans, , green chilis, corn, chicken broth, and cilantro, stir. Cover and cook on low for 4-5 hours. Remove chicken to large mixing bowl, shred, then return to slow cooker. Add cream cheese and half and half and cook on high for 15 minutes or until chili is creamy and slightly thickened. Stir well and serve with desired toppings.
