8-10 Peeled, diced potatoes (Red)
1 stalk Celery, chopped
1 Onion, Chopped
1 gal Milk
3-4 tbsp Butter
Leftover mashed potatoes
Parsley Flakes
Salt & Pepper

Directions:
Directions:
Place diced potatoes, celery and onion in stock pot, cover with water and allow to boil until potatoes are done. salt & pepper to taste. Add melted butter (3 or 4 Tbls) and milk. Allow to reheat but do not boil. Add parsley flakes, Thicken with leftover mashed potatoes. If you do not have mashed potatoes, thicken with a roux (cooked butter and flour-equal parts)
