Chicken:
8 pieces of chicken (thighs, legs and breast), skin removed
Water
2 tbsp. margarine
5 tbsp. flour, all-purpose
2 bay leaves

Dumplings:
2 c flour
4 tsp. baking powder
1 tsp. salt
1 c milk
4 tbsp. oil

Directions:
Directions:
Chicken:
1. Place chicken and bay leaves in a large casserole dish, cover with water with an extra 2” on top
2. Cover and on stove top, simmer on low-med heat for about 2 hours
3. Melt margarine and mix with flour for gravy
4. Stir mixture into chicken and continue to simmer until gravy is thickened. Add more as needed.
5. Top bubbling chicken and gravy with dumpling mix
6. Reduce heat, cover and simmer on top of stove for about 10-15 min or until dumplings are fluffy.
Dumplings:
1. Mix together flour, baking powder and salt
2. Mix together milk and oil
3. Gently add liquid mixture to flour mixture until just wet
4. Spoon into bubbling chicken and gravy immediately
