2 large ripe red tomatoes, halved horizontally
Pinch salt (optional)
Pinch freshly ground black pepper
Extra-virgin Olive Oil
Shredded mozzarella cheese

Directions:
Directions:
Slice tomatoes into ¼’ slices, place on broiler pan rack or sheet pan.
Coat each slice with a small amount of olive oil (use your fingers) and season lightly with salt and pepper.
Spread shredded cheese on each tomato slice.
Broil for 4-5 minutes or until cheese is browned and bubbly.
