1 liter Everclear grain alcohol

10 medium to large lemons*

10 c. water
3 c. sugar 
* Choose thick-skinned lemons because they are easier to zest. The lemons must be yellow and not tinted with green.

Wash the lemons with a vegetable brush and hot water to remove any reside of pesticides or wax;
Pat the lemons dry. Using a potato peeler, take all the lemon rinds off of the lemons. Place the rind-peelings in a large glass container with the Everclear alcohol. Cover the container and let it sit for at least seven days (up to 2 weeks is fine.) After that the lemons will not impart any more flavor). Strain the peels from alcohol so no sediment is in the liquid and pour into the large glass jar; discard peels. (save some-they are also good as a garnish in hot or iced tea, seltzer water, etc.) In a large saucepan, make a simple syrup by combining the water and sugar; let it simmer just long enough that the sugar is completely dissolved. Let simple syrup cool completely to room temperature. Add to alcohol in the jar and stir. The liquid will immediately become cloudy once the sugar syrup is added, which is normal. Store in and serve right from the freezer. Because of the alcohol, it will not freeze.
