12-13 cups Sliced canned Potatoes
1 Large onion, diced
¾ lb Bacon, diced
¼ cup Flour
1 ½ cups Vinegar
1 ½ cups Sugar
¼ cup Parsley Flakes

Directions:
Directions:
Drain and rinse potatoes. Place potatoes in large oven-proof pan, cover with parsley flakes. Fry bacon until crisp. Just before bacon is finished, add the onions and sauté. Add the flour to the bacon drippings stir until mixed. Add the vinegar and sugar and continue to stir until mixture becomes thick-about 5-6 minutes. After sauce has thickened, pour over potatoes, making sure all are coated well. Bake in oven at 300º for about 30 minutes.
