1/3 cup strawberry jam or preserves
1/4 cup water
1/2 tsp balsamic vinegar, (or lemon juice)
1/2 cup heavy whipping cream
1 cup mascarpone cheese
1/2 cup confectioners’ sugar
1/2 tsp vanilla extract
2 cups sliced strawberries
24 ladyfingers

In a medium bowl, combine mascarpone cheese, cream, sugar, and vanilla extract. Beat with an electric mixer or stand mixer on medium-high speed for 1 to 1 1/2 minutes until smooth and thickened. In a small bowl, combine strawberry preserves, water, and balsamic vinegar. Stir with a fork until combined. Dip the ladyfingers in the mixture to coat them. Line the ladyfingers in a single layer, in the bottom of an 8”x 8” or similarly sized baking dish. Spread half of the mascarpone mixture over the ladyfingers and layer with half of the sliced strawberries. Repeat with the remaining ladyfingers, mascarpone mixture, and sliced strawberries. Cover with cling wrap and chill at least 8 hours or overnight.

When preparing strawberry tiramisu one must feel light-hearted. If the preparer of the tiramisu is tense, The cream filling of the tiramisu will come out too heavy instead of light and fluffy. The moment I opened the fruit container, the aroma of fresh strawberries transported me to the afternoon we made the sweet cake. Make sure to dip the ladyfingers in the simple syrup carefully, being cautious not to leave them in long or they will get too soft, which will ruin the texture of the entire cake. The sweetness of the tiramisu can cure any bad mood, like the sun gleaming through the clouds on a gloomy day. Each heaping forkful of soft cake, rich cream, and fresh strawberry you get is as enlightening and mysterious as opening a treasure chest, the satisfactory taste forever engraved into your memories
