1 Tbsp butter
1/2 cup onion, chopped
1/4 cup celery, chopped
1 garlic clove, minced
8 oz can tomato sauce
6 oz can tomato paste
2 Tbsp grated parmesan cheese
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/2 tsp sugar
1/4 tsp black pepper
1 bay leaf
1 tsp fennel seed
1 Tbsp olive oil (use an oil with a good flavor)

Directions:
Directions:
In a large skillet, melt butter. Add the onion, celery, and garlic and saute until soft and transparent. Add tomato sauce and tomato paste and stir until smooth. Add remaining ingredients and bring to slow simmer.

Simmer for 30-60 minutes (or not at all depending on your taste and time frame).
Remove the bay leaf and sir in 1 tablespoon of olive oil. Spread the sauce on your prepared pizza dough.

I love this pizza sauce recipe, but I only make for our heart-shaped Valentine's Day pizza or when I have extra celery to use, which isn't often. When I do make it, I usually make a double batch and freeze half for later. I still think Barnaby's heart-shaped pizza served on a big doily is the best Valentine's Day dinner, but homemade can be just as fun as long as the sauce is good and there are doilies.
