Ingredients:  
Ingredients:  
3 c zucchini, diced
1 c rhubarb, diced
1 c sugar
1 t apple pie spice
Pinch of salt
c flour
c frozen concentrated apple juice, thawed
2 eggs, beaten

Pastry for 2 crusts for 9" pie

Apple pie spice:
t cinnamon
t nutmeg
t allspice
Cardamom

Directions:
Directions:
Combine all ingredients except pastry. Pour into unbaked pastry shell. Cover with top crust. Cut slit for steam to escape. Sprinkle lightly with sugar. Bake at 400 degrees for 20 minutes then at 350 degrees until golden brown.
