2 eggs, room temperature
½ teaspoon each of allspice, nutmeg and pumpkin pie spice
6 ounces chopped apple
~ 1 tbsp. water
¼ tsp. cinnamon
non-stick cooking spray

Directions:
Directions:
Combine eggs, water, allspice, nutmeg and pumpkin pie spice.

Spray a medium-sized frying pan with cooking spray and heat to medium-high. Pour in egg mixture and cook until ½ to ¾ of the way done. (Covering the pan will reduce cooking time.)

Add apples and cook until juice from the apples is absorbed and caramelized.

Cook uncovered for 1 to 2 minutes.

Turn onto a plate to serve, sprinkling with cinnamon if desired.
