Ingredients: FOR THE SHRIMP 1 lb. Shrimp, peeled and deveined, without tails (I find mine in the frozen section already prepared like this) Cajun Seasoning (see personal note for homemade msg free mix) 6 slices Bacon 2 Tbsp. Minced Garlic
FOR THE GRITS 2 cups chicken broth 2 tablespoons butter 1/2 cup quick grits 1/2 to 1 can of Rotel, drained 1 cup Velvetta, cubed

Directions:1. In a medium saucepan, bring broth, butter, and grits to a boil. Reduce heat to low and simmer for about 7-10 mins until grits are thickened and tender. Remove from heat and stir in Rotel and cheese.
2. Fry bacon in a skillet until crisp and brown. Remove from the pan, reserving bacon grease. Crumble bacon to be used later.
3. Season shrimp with plenty of cajun seasoning. Add the shrimp to the skillet and cook until the shrimp turn pink, about 1 minute per side. Lower the heat to medium and add the bacon and garlic. Cook for another 1-2 minutes until the garlic is softened and the shrimp turn white.
Serve the grits in bowl and top with the shrimp. Enjoy! |
