1 pork roast (cooked)
Reserve 1 cup broth from roast
5 Anaheim peppers
1 can Rotel
2 cans Las Palmas green chili enchilada sauce

Directions:
Wash and boil peppers, clean out seeds. Scrape the pepper to remove pepper from skin, discard skin. Shred cooked pork roast. Place the skinned pepper and 1/2 cup roast broth in blender, blend to chop the peppers. Place the peppers, Rotel, pork and enchilada sauce in a pot and simmer for 30-45 minutes.

Nana tells a story of the best green chili that she had ever eaten which has been the inspiration for the way she always eats green chili today; on the way home from a motor cross race, she and Papa stopped at a restaurant called Khaki’s where they served a layer of fried potatoes topped with chicken fried steak, covered with green chili and topped with cheese. She said that was the “best stuff she has ever had”.
