FILLING:
2 tbsp butter (room temperature)
3/4 c. dark brown sugar, packed firmly
1 (15 oz.) can pumpkin puree
1 tsp ground cinnamon
1/8 tsp ground nutmeg

EMPANADA DOUGH:
3 c. flour
2 tsp baking powder
1/2 tsp salt
1/2 c. shortening (or lard) - room temperature
2 eggs
1/2 c. milk
2 tbsp sugar
1/2 tsp ground anise

Directions:
Preheat oven to 350º

Pre-mix pumpkin filling and refrigerate. Set Aside

Mix flour, baking powder, salt, anise & sugar, work in shortening to powder mix(don’t be shy, use your hands! Easier if you coat your hands with four first)

After shortening and powder mix is clumpy and mixed as best you can, work in eggs and milk. Best to still use flour‐hands. Knead dough on wax paper (I tape a big sheet onto my counter and keep it “flour-ee” to avoid sticky dough.)

Put dough in a bowl in 10 balls and cover bowl with damp dish‐towel. Set aside for an hour.

Assemble into pockets and press closed with a fork.

Brush tops with egg wash and sprinkle with sugar.

Bake for 15-20 mins(watch until golden brown).
