1 tongue (beef)
¾ - 1 c vinegar
¾ - 1 c water
¾ c sugar
1 onion, sliced
2 T whole allspice
¾ t ground allspice
2 bay leaves
Celery
Carrots

Directions:
Directions:
Clean and wash tongue. Cook tongue in boiling water with carrots, celery, salt, pepper and onion until done. Cool. Remove skin and cut into bite-size pieces. Combine water, vinegar and sugar. Stir until sugar is dissolved and then add remaining ingredients. Put tongue in quart jar or glass bowl and pour mixture over tongue. Refrigerate at least 24 hours. Best after 2 or 3 days.

This didn’t last long at our house as it was a real treat to have after butchering a beef that we raised.
