Cake:

½ c shortening
1 c sour milk *
1 egg
2 c flour
1½ c rhubarb (fresh or frozen), chopped quite small
1½ c brown sugar
½ t salt
1 t baking soda
1 t vanilla
* If you don’t have sour milk I have used milk & added a little lemon. It worked well.

Topping:

½ c sugar
½ c coconut
1 t cinnamon
½ c chopped nuts

Directions:
Directions:
Blend brown sugar and shortening. Add milk and egg. Blend thoroughly. Add dry ingredients and rhubarb; blend just to moisten. Pour cake batter in 9 x 13 inch pan which has been greased and floured. Top with topping. Bake at 350 degrees for 45 minutes.

Mix the topping ingredients together before putting it on the batter.
