8 Medium potatoes, peeled and cubed
1/2 cup Sour cream
1/3 cup Butter softened
1 tsp Salt
1/4 tsp Pepper
1 cup Shredded Cheddar Cheese
2 strips Bacon, cooked and crumbled
1 tsp Minced chives

Directions:
Directions:
Place potatoes in a saucepan and cover with water. Cover and bring to a boil and cook on medium-high for 15-20 minutes or until potatoes are tender. Drain and mash. Add sour cream, butter, salt and pepper and beat until smooth and fluffy. Transfer to a greased 2 1/2 quart baking dish. sprinkle with cheese, bacon and chives., Bake uncovered at 325º for 20 minutes or until heated through and cheese is melted.
