2-3 Boneless, skinless chicken breasts
1/2 -3/4 cup Celery, finely chopped
2-3 Grated hard boiled eggs
1/2 cup Seedless grapes, halved
Salt to taste
Pepper to taste
Hellmann's mayonnaise to tase

Directions:

Cook and shred chicken into small pieces. Mix chicken with chopped celery, grated eggs, and salt and pepper to taste. Add grapes, if desired. Start adding mayonnaise an 1 /8 cup at a time until mixture holds together (roughly 1/2 to 3/4 cup). Serve on sliced croissants as a sandwich, or on a lettuce leaf, or on a cut tomato as a stuffed tomato. Take a whole ripe tomato, remove stem and core. With a sharp knife, make cut from the top of the tomato to not quite the bottom. You will be making "wedges" out of the tomato but they will remain connected at the bottom. Spread wedges out from the center and place a scoop of chicken salad in the middle of the tomato.

The secret of this chicken salad is the amount of mayonnaise. Do not overdo the amount of mayonnaise, use just enough to "hold" the mixture together. The star of this salad is the chicken, not the mayonnaise.
