1 Package of Yeast
1 Cup Milk, Scalded
½ Cup Shortening
2 tsp. Salt
5 to 6 Cups of Flour
½ Cup Water
1 Cup Hot Mashed Potatoes
¼ Cup Sugar
2 Beaten Eggs

Directions:
Directions:
Soften yeast in warm water 110º allowing it to activate. Combine milk, potatoes, shortening, sugar & salt into large bowl, let stand (potatoes can be plain or "fixed" up).
Add yeast, egg, and 1 ½ cups flour. Beat well. Cover and let stand in warm place for 1 hr or until full of bubbles.Stir in 3 ½ - 4 ½ cups of flour to make fairly stiff dough. Knead in mixer with kneading hook for at least 10 minutes or knead by hand for at least 20 minutes or until smooth. Return dough back to
greased bowl, turning once to grease surface. Refrigerate or let rise again. Shape into rolls and place in greased pan. Let raise again then bake in hot oven at 425º for 15-20 minutes.

This recipe was created by my Great Grandma Nanna (O'Day) which was shared with my Grandma Judy once she married my Papa John. I look forward to Grandma Judy making these every holiday. They are so good!
The dough can also be used for Cinnamon Rolls.
