1 pkg. pork chorizo
10 eggs (beaten)
1 c. shredded cheese
6 tortillas

*Use pork chorizo only, beef is terrible!

Directions:

Cook chorizo until it turns to a soft sausage consistency, stir eggs into chorizo and continue to cook (like scrambled eggs) until the eggs are done.
Add to a tortilla, add a little cheese and devour YUM!

I have eaten chorizo my entire life, the smell is amazing. No better memories than as a kid with Nana and Papa at Grandma Opal’s eating chorizo, fried potatoes and beans for breakfast.

Some moments in time you wish you could travel back to, not to a major event but a simple breakfast with people we love.
We take simple times for granted but we sure miss them when we can’t go back.
