1 can (15-1/4 ounces) sliced peaches, drained
2 packages (3 ounces each) peach or apricot gelatin
2 cups boiling water

1 carton (8 ounces) frozen whipped topping, thawed
Additional sliced peaches, for visual presentation
Maraschino cherries (optional)

Directions:
Directions:
Drain peaches, reserving 2/3 cup juice.

Squish peaches into small pieces using your hands; set aside.

In a large bowl, prepare jello as directed. Stir in reserved syrup along with boiling water (do not exceed the recommended liquid volume).

Chill until completely thickened. Fold in gelatin mixture, crushed peaches and cool whip. Mix with a hand blender.

Pour into an oiled 6-cup mold. Chill overnight. Unmold onto a serving platter; garnish with additional peaches and maraschino cherries if desired.

This was one of my father's (Papa Borisa) favorite deserts! You could count on it being gone in 36 hours once made!
