12 large eggs
1/2c tbsp. of finely chopped yellow/white onions
Salt and pepper
1/2c cooked chopped bacon
3/4c tbsp. of shredded cheddar cheese

Tomato Basil Mozzarella
Mushroom and Pepper

Preheat oven to 350 °F

Lightly spray a 12-cup capacity muffin tin with olive oil spray (or any nonstick will do) I use silicone muffin molds.

In a large bowl, whisk together eggs and onion. Season with salt and pepper.

Add egg mixture halfway into each cup

Put in the topping

Bake for 20 mins.

Goes well with Salsa or hot sauce 
