3 cup pickling lime
2½ gallons water
7 lbs. cucumbers
3 qts. vinegar
5 lbs. sugar
½ box pickling spice

Mix lime and water, slice cukes and pour into lime mixture in enamel cookware and mix.
Let stand for 24 hours, stirring occasionally.
At end of 24 hours, wash every four hours times four.
After 4th washing, mix vinegar, sugar and pickling spices (spices can be tied in bag/cheesecloth).
Put cukes in the mixture and bring to a boil. Remove from heat and let sit overnight.

Next morning, turn on and bring to boil, boil for one hour...put in jars and seal.

This is one of those recipes that you wish you had gotten from the source before they were gone. My mother-in-law, Mary, made pickles every year. Sweet, crisp pickles! They were awesome. After Mom was gone, my hubby continued to grow cucumbers and commented that he would love to have some of Mom's pickles. I wanted to make those same pickles but did not have any idea where to look. One day, I was talking to one of Mom's dear friends and co workers, Phyllis Hall, who told me she had the recipe Mom used! Sure enough, she gave me the recipe and after much practice, I can make pretty good pickles....especially, according to my grandson, David III who eats them like a vegetable!! Lot of work, but well worth it!! Enjoy!!
