2-3 tbsp. margarine
8 oz. tomato sauce
¾ c. Cornflake crumbs
½ tsp. oregano
¼ c. Parmesan cheese
4 slices mozzarella cheese (4 oz.)
4 chicken breasts, skinned and boned
1 eggs, beaten with 1 tbsp. water

Directions:
Directions:
Melt margarine in baking dish. Combine Cornflakes and Parmesan cheese. Dip chicken pieces in egg and then Cornflake mixture. Place in baking dish and bake at 400º for 20 minutes. Turn meat and bake 15-20 minutes more. Meanwhile, combine tomato sauce and oregano. Heat to boiling, do not burn! Pour sauce over meat. Top with cheese slices. Return to oven long enough to melt cheese.
