- 1 c flour
- 1/4 tsp salt
- 1 tsp. baking powder
- 1/2 c shortening
- 1 egg, well beaten
- 1 tsp. milk

RASPBERRY JAM:
- 2 Tbsp. butter
- 1 c sugar
- 1 egg, well beaten
- 1 tsp. vanilla
- 2 c coconut (sweetened)

Directions:

Preheat oven 350 degrees
1. Sift together flour, salt, and b powder.
2. Cut in shortening using fork
3. Combine beaten egg and milk. Work into first mixture.
4. Pat mixture over the bottom of a well-greased 8" x 8" pan
5. Spread with thin layer of thick raspberry jam
6. Blend: Sugar and butter, stir in well-beaten egg, salt, vanilla and coconut.
7. Spread over the top o jam (small pieces until it covers the top).
8. Bake for 45 minutes.
9. Cool before cutting into squares
