1 pound boneless, skinless chicken breasts, cut into 1" pieces
1 medium onion, chopped
1 (10 ounce) can diced tomatoes and green chilies
1 (8 ounce) can tomato sauce
1 (15 ounce) can Ranch-style pinto beans or beans of your choice
3 cups cooked brown rice
non-stick cooking spray
fat serving of choice

Directions:

Spray a large skillet with non-stick cooking spray. Over medium-high heat cook chicken pieces 3 to 5 minutes, stirring continuously. Remove from pan and set aside.

Cook onions next over medium heat, adding more spray if necessary. Once onions are tender (3 to 5 minutes), add the canned tomato products. Simmer 3 minutes.

In a separate saucepan, measure protein portion from chicken, vegetable portion from tomatoes and onions, starch portion from equal parts rice and beans and fat portion from your choice of fat into saucepan.

Stir mixture together over medium flame until heated through, allowing flavors to blend.
