4 ounces boneless, skinless chicken breast
1 cup red bell peppers, chopped
1 cup Portobello mushrooms, chopped coarsely
non-stick cooking spray

Directions:
Directions:
In a large skillet coated with non-stick spray, sauté mushrooms and peppers until cooked through. Remove from pan, measure vegetable allotment and set aside.

Cut chicken into bite-sized pieces. Quickly sauté chicken in skillet, adding more spray if necessary. Measure protein allotment and return to pan. Reduce heat, covering pan.

Cook about 20 minutes, until heated through, adding the measured vegetables for the last 5 minutes.
