1 large onion, chopped
1 or 2 cloves garlic, minced
1 (16 ounce) can whole tomatoes or tomato puree
2 stalks celery, chopped fine
1 to 3 tbsp. chili powder
1 tsp. salt
½ tsp. cumin
¼ tsp. ground pepper
1 cup green or red pepper, chopped
firm tofu, chopped into cubes
kidney beans, drained and rinsed
non-stick cooking spray

Directions:

Spray a large sauce pan generously with the non-stick cooking spray. Sauté garlic and onions first. Add the tomatoes and the liquid, spices and vegetables. Heat to boiling. Reduce heat and simmer until vegetables are cooked.

Measure protein portion from tofu, starch portion from beans, and vegetable portion into a separate saucepan.

Heat through over low temperature, allowing flavors to blend.
