1 1/4 c potato starch
1 1/4 c almond flour
2/3 c oat flour
1/2 c millet flour
1 Tbsp yeast
2 tsp xanthan
1 1/2 tsp salt
1 1/2 c warm water
2 eggs
2 Tbsp canola oil
1 Tbsp honey
1 Tbsp canola for oiling bowl

Directions:

Mix flours in mixer bowl. Add yeast, gum, and salt. Stir to combine.
Pour warm water, eggs, oil and honey into dry mix. Mix on medium speed until dough comes together. Will be soft
Place dough in a large oiled bowl. Cover with a clean cloth. Let rise until doubled, about 2 hours.
At end of rising, preheat 425º. Cut dough into halves. form 2 small boules (rustic ovals). Make 2 1/4" deep cuts with a serrated knife on top of each.
Place on a pizza stone or baking sheet on the bottom rack of oven. Bake 30 minutes until browned and sounds hollow when tap bottom.
Cool 30 before slicing.
