3 cups cut-up very good summer tomatoes - Heirloom or other--tomatoes must be good ones!
8 oz. cream cheese
3/4 cup (or less) olive oil
1 Tbsp white wine vinegar
2 Tbsp+ fresh basil leaves minced
2+ garlic cloves minced
1/2 tsp salt
1/2 tsp pepper
1 pound linguine

fresh Parmesan grated

Directions:
Directions:
Chop basil leaves and tomatoes. Cook pasta, drain well, and immediately mix in cream cheese while pasta is still hot enough to melt the cream cheese.

Add all other ingredients and top with grated parmesan.

This is very, very good but your tomatoes need to be good ones--hard to find these days.
