2 c flour for drop biscuits, 2 3/4 c for cut or shape biscuits, like pigs-in-blankets
1 tsp xanthan gum, if your flour doesn't have any
1 Tbsp baking powder
1/4 tsp baking soda
2 tsp sugar
1/2 tsp salt
8 Tbsp butter
1 c milk
1 1/2 tsp white vinegar

Line pan with parchemnt paper.
In large bowl, mix dry ingredients, well. Cut in butter. With well floured hands, press butter pieces between thumb and fingers.
Create a well in center of the mixture. Pour in milk and vinegar. Stir. Use a spring loaded ice cream scoop to drop onto pan, about 1" apart.
Place the pan in center of oven, about 15 minutes.
