Dough:
3 large eggs
4 cup flour
¼ cup water
dash of salt

Filling:
1 lb. ricotta cheese
2 eggs
1 Tbsp. parsley
¾ cup grated cheese (Romano or parmesan)
½ tsp salt
¼ tsp pepper
½ tsp Italian seasoning

Directions:

Mix filling ingredients and set in refrigerator.

Mix dough ingredients and roll out ⅛ inch thick on a floured surface. Cut the dough into 6x6 inch strips (can be smaller). Drop 1 tsp filling on each strip. Fold the dough over and press with a floured fork to close the edges to become a pocket

Boil a pot of water and drop ravioli pocket in the water until the dough is soft and the filling is firm. When pockets float to the surface they are ready (about 10 min).

Serve with spaghetti sauce and your favorite cheese on top.
