Baked Rice Pudding Recipe

Combine in saucepan:
⅔ cups minute rice,
2¾ cup milk,
⅓ cup sugar
½ tsp salt
⅓ cup raisins

2 eggs
1 tsp vanilla
¼ tsp nutmeg

Directions:
Directions:
Bring first group of ingredients in saucepan to a boil stirring frequently.
Reduce heat and simmer 10 min stirring occasionally.
In a 1 qt casserole dish, mix 2 slightly beaten eggs, vanilla, and nutmeg together.
Slowly stir in rice mixture. Mix well.
Place casserole dish in pan of hot water.
Bake at 375º for 20-30 min until center is set.
Cool at least one hour before serving.
