1/4 cup butter
1 small onion finely chopped
1 stack celery finely chopped
1 carrot finely chopped
2 cloves garlic minced
2 tbsp. flour
3 tbsp. tomato paste
4 cups chicken broth
2 cans diced tomatoes drained
3 tbsp. sugar
1/4 tsp. nutmeg
1/4 cup heavy cream
Salt & Pepper to taste

Melt butter in saucepan over medium heat
Stir in onions, celery, carrot and garlic - cook till tender (about 8 minutes)
Stir in flour and cook 1 minute longer (stirring)
Stir in tomato paste, chicken broth, tomatoes, sugar, nutmeg
Bring to a boil over high heat then reduce to medium heat and simmer/cover for 15 minutes
Pour 1/2 to 3/4 of soup into a blender (filling no more than half of blender)
Hold down lid with paper towel and blend
Return pureed soup to saucepan with the rest of soup and stir in cream
Cook over medium heat until hot and serve with salt & pepper
