Ingredients:  
3 cans northern white beans
2-3 cans chicken broth (depending on how thick you want the chili)
1 medium onion, chopped
3 cloves garlic, minced
1 Tbsp. olive oil (or butter)
1 can (4 oz) diced green chilies (mild or hot depending on your taste)
1 tsp. cumin
1½ tsp. oregano
¼ cayenne pepper
4 cups shredded (3-4 chicken breasts)

Toppings: Shredded mozzarella or chihuahua cheese, tortilla chips (consider the Hot Blue chips), sour cream, avocado.

Directions:
Directions:
Saute onion and garlic in oil (or butter) until tender. Set aside.
In another pan, cook chicken breasts in butter until just done, then shred the meat.
In the same pan, add the onions and garlic and all of the spices.
Add the remaining ingredients along with the chicken.
Simmer on the stove for 1 hour (or all day in a crock pot).
Top bowls of chili with your favorite toppings.
