1 Tbls Olive oil
16 oz Chicken breasts or tenderloins
4 Roma tomatoes
8 oz sweet barbecue sauce
8 oz Mexican shredded cheese
Cooked white rice

Directions:
Directions:
Heat olive oil in frying pan
Cook chicken in frying pan flipping every few minutes until almost fully cooked (thin slices or tenderloin pieces are easier to cook evenly in a pan)
Dice tomatoes and spread evenly on top of chicken in pan after it is almost fully cooked
Top tomatoes with sweet barbecue sauce and then top with shredded cheese
Place lid on pan for 3-5 minutes until cheese is fully melted
Serve over cooked white rice
