Pasta sauce (ideally the Quick Tomato Sauce recipe, see the Sauce section)
4 oz log soft goat cheese (plain or garlic & herb), sliced into 1/2-inch pieces
Fresh basil
Baguette, sliced

Directions:
Directions:
Preheat oven to 350º F.

Ladle pasta sauce into a shallow, oven-safe dish. Arrange the goat cheese disks on top of the sauce. Bake uncovered until sauce bubbles at the edges and the cheese is hot, about 25 minutes.

While the cheese bakes, toast the baguette slices until golden brown. Optional: make them garlic parmesan toasts using garlic powder or a spread.

When cheese is done, remove from the oven and allow it to cool for about 5 minutes. Garnish with fresh basil and fresh ground black pepper. Serve with the toasts and a few spoons for scooping.

We would always order a version of this dish from La Tasca, our favorite tapas/special occasion restaurant in Arlington Heights, IL. We couldn't remember the name of the dish (Queso de Cabra) so we just called it "the goat cheese thing". Can be made as individual appetizers by spreading the sauce on the toast, topping with cheese, then broiling.
