Vegetables:
2 large field cucumbers seeded
2 large Spanish onions (or 4 cooking onions)
1 small cabbage
1 large cauliflower
2 green peppers
2 red peppers

Dressing:
10 tsp mustard powder
2 tsp turmeric
8 cups white sugar
1 cup flour
1 quart white vinegar

Directions:
Directions:
Chop all vegetables fine or grate them in food processor. Then add 1/2 cup pickling salt and enough water to cover. Let stand 1/2 hour, then drain well, (squeeze out the moisture).

Stir all dressing ingredients until smooth, then cook dressing until it boils, then add the chopped vegetables and simmer for about 15 minutes. Till all heated through.

Pack to the top in hot jars and seal.

Makes 8-10 pint size jars.

Our large canning pot works best (like stock pot). Cook over medium heat so as not to burn. Chop all vegi then start the dish washer with the jars in it. By the time dishwasher is done so is the relish mixture.
